How to make it

  • In a large frying pan (you might need 2 pans), heat oil over medium heat.
  • First I rinse and thoroughly dry the chicken on paper towels.
  • Lightly salt and pepper chicken.
  • Add chicken, skin side down and cook to lightly brown.
  • Turn chicken over and lightly brown the other side.
  • Remove chicken from skillet, set aside and reserve juices.
  • Add onion, garlic, mushrooms, and bell pepper to skillet and saute until softened, about 7-10 minutes.
  • Add remaining ingredients and stir well.
  • Add chicken pieces to pan.
  • Increase heat to boil then reduce heat to a simmer.
  • Cover and simmer for 35 minutes or until chicken is tender.
