Chicken Cacciatore - Gluten Free

- 6 Tbsp. olive oil shopping list
- 6 lbs. chicken pieces shopping list
- 2 medium onions, sliced shopping list
- 3/4 lb. mushrooms, sliced shopping list
- 2 large bell peppers, cut into 1 inch pieces shopping list
- 2 cans (16 oz) tomatoes - I like diced shopping list
- 2 cans (8 oz) tomato sauce shopping list
- 2 tsp. dried oregano shopping list
- 2 tsp. salt shopping list
- 1-1/2 tsp freshly ground pepper shopping list
How to make it
- In a large frying pan (you might need 2 pans), heat oil over medium heat.
- First I rinse and thoroughly dry the chicken on paper towels.
- Lightly salt and pepper chicken.
- Add chicken, skin side down and cook to lightly brown.
- Turn chicken over and lightly brown the other side.
- Remove chicken from skillet, set aside and reserve juices.
- Add onion, garlic, mushrooms, and bell pepper to skillet and saute until softened, about 7-10 minutes.
- Add remaining ingredients and stir well.
- Add chicken pieces to pan.
- Increase heat to boil then reduce heat to a simmer.
- Cover and simmer for 35 minutes or until chicken is tender.
