Fish Cutlets

- 2 by 4 inch fillets of fish (traditionally Bekti is the fish used. This is a fresh water fish) - 8 shopping list
- marinade shopping list
- -------------- shopping list
- juice of 1 lemon shopping list
- cilantro - 1/2 a cup, chopped shopping list
- vinegar - 2 tsp shopping list
- garlic paste - 1 tsp shopping list
- salt to taste shopping list
- *Green chillies - 2, chopped into very small pieces (ref: http://www.freshchannels.com/image/nav/content/fresh_produce/photo/fc_chiliGreen2.jpg) shopping list
- *If these are not available, try a few drops of tabasco shopping list
- For frying shopping list

- 1 egg shopping list
- 1 cup of breadcrumbs shopping list
- oil for shallow frying shopping list
How to make it
- wash the fillet thoroughly
- soak in lemon juice for about 15 minutes
- discard the juice and rinse out fillets and dry on a paper towel (this helps remove any residual odour)
- coat fillets in cilantro, chillies, vinegar and garlic and keep in the fridge for 15 minutes or more.
- spread breadcrumbs evenly on a work surface.
- Beat egg and keep in a wide bowl
- Dip each fillet in the egg and coat with breadcrumbs
- Heat oil till smoking
- Lower flame and shallow fry till golden brown.
- Place on a sheet of absorbent paper to remove excess oil
- Enjoyed best while hot with tartare sauce!!
