How to make it

  • wash the fillet thoroughly
  • soak in lemon juice for about 15 minutes
  • discard the juice and rinse out fillets and dry on a paper towel (this helps remove any residual odour)
  • coat fillets in cilantro, chillies, vinegar and garlic and keep in the fridge for 15 minutes or more.
  • spread breadcrumbs evenly on a work surface.
  • Beat egg and keep in a wide bowl
  • Dip each fillet in the egg and coat with breadcrumbs
  • Heat oil till smoking
  • Lower flame and shallow fry till golden brown.
  • Place on a sheet of absorbent paper to remove excess oil
  • Enjoyed best while hot with tartare sauce!!
