How to make it

  • Mix all dry ingredients in a bowl large enough to get your hand in to mix.
  • Add the vanilla, Pam, fat, applesauce and using a pastry blender or your hands or a wooden spoon, mix the wet with the dry ingredients. Add 1 Tablespoon water and mix well again. If it is too dry/stiff now, add some of the 2nd Tablespoon of water. Stir in the currants (or chocolate chips, or___) and use the Pam to "grease" a metal pie tin (I use the ones from Keebler's piecrusts). Now, visually divide the dough in half. Press one-half of this cookie dough across the base of the pie tin. This half of the recipe fills the bottom and almost "kisses" the edge. Bake in a 350 * F oven (preheated)
  • for 12 to 14 minutes. I like a crunchy cookie and watch for browning edges around the perimeter.
  • The other half of the dough I put in the freezer!
  • Two treats and half the fat.
