Cilantro Pesto

- 2 c packed fresh cilantro leaves shopping list
- 3/4 c hulled pepitas(raw pumpkin seeds) shopping list
- 1/2 c grated Cotija cheese(I use parmesan or romano) shopping list
- 2 cloves garlic,crushed shopping list
- 1 c plus 2 Tbs canola oil shopping list
- 1 tsp grated lime zest shopping list
- 2 Tbs fresh squeezed lime juice shopping list
- salt and pepper shopping list
How to make it
- Place cilantro ,pepitas,cotiza and garlic in food processor and blend till smooth. with motor running,add oil in slow,steady stream.
- Transfer mixture to a bowl and stir in the lime zest,juice,1-1/4 tsp salt and 1/2 tsp pepper. Use immediately,refrigerate up to 2 days or store in airtight container in freezer for up to a month.
