Porcini Brocolli Quinoa Pilaf

- * 1/2 cup Organic Quinoa shopping list
- * 10 pieces Dried Porcini Mushrooms shopping list
- * 1 cup Brocolli Florets (no Sauce) shopping list
- * 1 cup Water shopping list
- * 1/4 cup Fresh Mint shopping list
- * 1 tsp Real Iodized Salt shopping list
- * 1/2 tsp Cayenne Pepper shopping list
- * 1/2 tsp Ground Black Pepper shopping list
- * 1 tsp Onion Powder shopping list
How to make it
- Soak the dried mushrooms in 1 cup warm water for at least an hour.
- Cut the mushrooms into bite size pieces.
- In the pot you will use to boil the rest, pour in the quinoa seed and let them toast up for about 5 minutes.
- Pour the mushroom water plus plain water as needed to get 1 cup into a pot over the Quinoa and bring to boil.
- Stir in salt, cayenne, black pepper and onion powder, stir again.
- Cover and reduce heat and let simmer for about 15 minutes.
- Add the brocolli florettes, mushrooms and chopped mint to the quinoa, cover and let simmer for another 10 minutes.
