How to make it

  • Soak the dried mushrooms in 1 cup warm water for at least an hour.
  • Cut the mushrooms into bite size pieces.
  • In the pot you will use to boil the rest, pour in the quinoa seed and let them toast up for about 5 minutes.
  • Pour the mushroom water plus plain water as needed to get 1 cup into a pot over the Quinoa and bring to boil.
  • Stir in salt, cayenne, black pepper and onion powder, stir again.
  • Cover and reduce heat and let simmer for about 15 minutes.
  • Add the brocolli florettes, mushrooms and chopped mint to the quinoa, cover and let simmer for another 10 minutes.
