Western Burritos

- 1 tablespoon olive oil shopping list
- 1 cup chopped boiled ham shopping list
- 1 red, green or yellow bell pepper, chopped shopping list
- 1 yellow onion, chopped shopping list
- 8 large eggs, beaten shopping list
- 1/2 teaspoon dried oregano leaves shopping list
- 6 tablespoons Chile & Lime Hot Sauce or more to taste shopping list
- 1 1/2 cups shredded Cheddar or Jack cheese shopping list
- 6 burrito size flour tortillas, heated (10 inch) shopping list
How to make it
- 1. Heat oil in large nonstick skillet. Cook ham, bell pepper and onion about 3 minutes or until tender. Stir in eggs and oregano. Cook over medium heat until eggs are scrambled.
- 2. To make each burrito: Spoon 3/4 cup egg mixture across center of 1 tortilla. Sprinkle with 1/4 cup cheese and drizzle with 1 Tbsp. Chile & Lime Hot Sauce. Slightly fold over both sides of tortilla. Fold bottom third of tortilla over filling. Roll up to enclose filling. Repeat with remaining ingredients.
- 3. Heat tortillas in microwave for 1 to 2 minutes (or in a 350°F oven for 5 minutes) until cheese melts and tortillas are heated. Serve with additional Chile & Lime Hot Sauce.
