How to make it

  • pre-heat the oven to 350
  • peel and cut the eggplant into 4 equal quarters lengthwise
  • cover the eggplant in the grapeeed oil, let it sit while u do the next steps.
  • smash the meba toast in a bag to make it like bread crumbs.
  • put the melba crumbs on a plate mix in parsley, oregano, and parmano cheese
  • beat 2 eggs in a bowl
  • pour flour in a separate bowl
  • dip the eggplant into the egg , then the flour,then the egg, then roll it evenly in the melba mixture
  • use the grapeseed oil on the baking sheet so it wont stick
  • place each of the eggplant quarters on the tray
  • let them bake for 10 mins
  • put the oven on broil for another 5 mins
  • use cucumber dressing 4 a dipping sauce
