Italian Pizzelle (classic)

- 1 3/4 cup all purpose flour shopping list
- 2 tsp baking powder shopping list
- 3 large eggs shopping list
- 3/4 cup granulated sugar shopping list
- 1/2 cup unsalted butter, melted shopping list
- 1 tbsp vanilla extract shopping list
- Pizzelle Iron or Press shopping list
How to make it
- Preheat Pizzelle Press on 3.
- Place flour and baking powder in small bowl and stir to combine. Place eggs and sugar in a medium bowl. Mix on medium speed 1 minute, until thickened. On low speed add the melted butter and vanilla in steady stream and mix until combined, about 15 seconds. Add flour mixture and mix just until combined - about 10 to 15 seconds. Do not overmix.
- Lightly brush top and bottom grids with vegetable oil just before baking. Drop 1 1/2 to 2 tsp batter on to patterned cookie grids. Follow mfr instructions to cook.
- Once cooled dust with powered sugar. Wonderful with thin layer of jam or Nutella spread over cookie just before eating.
