How to make it

  • Preheat oven to 350 degrees.
  • Place the pie crust in a pie dish and set aside.
  • In a medium pan, saute the onion and garlic till caramelized.
  • In a medium bowl blend eggs and milk till evenly mixed.
  • Add the spinach, onion and garlic to the egg and milk mixture.
  • Next add the cheese and mix well till evenly incorporated.
  • Pour the mixture into the unbaked pie crust.
  • Sprinkle the top with a little more mozzarella if desired.
  • Place pie in oven and cook till golden and puffed up in the center.
  • It should be done in no more than an hour.
  • When done the quiche should sit for about 5 minutes before serving.
  • Server warm.
  • Refrigerate leftovers.
