How to make it

  • Grate or chop cauliflower finely to resemble rice.
  • Place in a microwavable container and cover with clingfilm.
  • Microwave for 3 minutes on high.
  • Add curry powder and salt to taste. Combine and stir with a fork to fluff up. Microwave for a further 2 minutes. You may need to microwave further if you have a large head of cauliflower.
  • It isn't necessary to add any water - if you do it will become rather gluggy.
  • You can use other flavours such as stocks or cook it plain and use it to absorb the flavour of whatever you serve it with such as a meaty stir-fry.
