Smoked sausage surrounded by sauteed veggies

Ingredients
  • 1 package smoked sausage links
  • 1 large tomato
  • 1 medium onion
  • 1 tsp. sweet relish
  • 1 tsp. orange zest
  • 2 tbs. finely minced garlic
  • salt and pepper
  • red pepper flakes
  • 2/3 cup water
  • 1/4 oil
  • dried oregano

Directions
  1. Preheat pan on medium high heat pour about 2 tsp. oil in pan.
  2. Slice sausage in half
  3. Slice lengthwise to get strips then place strips on side and slice once more
  4. Repeat on each link..
  5. Dice onion into small pieces
  6. Dice tomatoes into small pieces.
  7. Drop sausage into hot pan, allow to cook for about 5 minutes
  8. Add tomatoes, allow tomatoes to seep and create a juice in pan(5 min)
  9. add onions.
  10. salt and black pepper to taste.
  11. Allow sausage and veggies to cook down place a lid over it for about 5 min
  12. Add orange zest,sweet relish,red pepper,garlic.
  13. pour a small amount of water into pan just enough to control the speed of cooking, To prevent burning and create a sauce.
  14. Allow food to cook down and thoroughly heat.Sprinkle oregano once plated
