Chicken N' Noodle Veggie Stir Fry

- 4 marinated boneless skinless chicken breasts shopping list
- (teriyaki marinated a head of time for best flavore) Note... I use ginger & Sesame Teriyaki sause that I find at Safe Way! You can use like half a cup of the sause and add water if needed to cover the meat! shopping list
- one onion shopping list
- one galic clove shopping list
- two carrots shopping list
- half a head of cabage shopping list
- one medium zucchini shopping list
- one or two cups of broccoli shopping list
- 4 packets of THAI Kitchen, Thai lemongrass & chili, instant rice noodle Soup ( can find at almost any store ) shopping list
- 1/4 cup of ginger & sesame teriyaki sause shopping list
- 1/4 of a cup of oilve oil shopping list
- pepper to taste, optional shopping list
- salt to taste, optional shopping list
- splah of soy sause, optional shopping list
How to make it
- Important to have the 4 boneless skinless chicken breasts sit in the teriyaki marinated a few hours before making. Just cover the meat well in a glass bowl and put into the frige cover with plastic wrap!
- In a large pan put half of the 1/4 cup of olive oil then heat pan to about medium heat. Add in the 4 chicken breast. Cook until done. Take off the heat, let stand and cool while cooking the veggies. Chop or slice the chicken after it has cooled down. Should only take 5 mins.
- Now adding the other half of the 1/4 cup of olive oil back into the pan heat back up to a medium heat. Put in the galic, onion, and carrot. Cook them until onion is transluscent. Then add the broccoli and zucchini adding salt and pepper as you want to the veggies. Stir after they have sat on top of the garlic and onions and carrots for a few mins.While the veggies are cooking get out a medium sause pan put in 2 cups of water and bring to a boil, this is for the rice noodles. Once the zucchini and broccoli have started to get some color and sofen up a bit then add in the cabage. Now add the 1/4 cup of ginger and sesame teriyaki sause on top... Let this cook a few more mins. Then Stir all together, add in the chopped up chicken. Really trying not to have the veggies become to soft or colorless. It's very important that they still have some crunch to them and vibrent colors. Now put the rice noodles into the bowling water. They only take 3 mins. to cook. (only add two of the seasoning packets from the packets of noodles.... The seasonings go a long way! This is just a quick way to get a tasty rice noodle for this dish, it's my short cut!
- Once the rice noodles are finished its ready to be dished up and enjoyed!
- I find that a bowl works great for searving this dish in, putting the noodls and a bit of the water in with a few dashes of soy sause... Then putting the chicken and veggies on top and serving it up!
