How to make it

  • Into a bowl, combine croutons, bread crumbs, corn meal, black pepper, cayenne pepper, chili powder, and thyme. Add and mix onion, garlic, jalapeno, and green pepper. Add meat, salt, and egg. Hand-mix, careful not to squeeze the meat.
  • If making for less meat, I've found that this recipe still works well by keeping the weight of dry & fresh ingredients unchanged, while adding only 1.5lbs of meat and 3 eggs, rather than the prescribed 3lbs of meat and 1 egg.
  • Pack this mixture into an 8-inch cast-iron skillet, or form into a log shape and place onto a 12" cast-iron skillet. Bake at 350'F for approximately 1 hour and 20 minutes or until internal temperatures reach 155'F.
  • Combine the ketchup, cumin, habanero, and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. Re-coat as needed.

    I do think that it can develop some pockets of extra spiciness with the jalapenos. This can likely be solved with a food processor. Until then, I'm going to experiment with putting the Green Chile habanero sauce into the meat mixture as a replacement.
