How to make it

  • In a large mixing bowl, cream the butter and 1/2 cup sugar until light and fluffy
  • Beat in the egg and vanilla
  • Gradually add the flour and salt
  • Mix well
  • Cover and refrigerate for 15 minutes
  • On a floured surface, roll out the dough to 1/4 inch thickness
  • Cut with a floured 2-inch cookie cutter or shape into 2-inch x 1 inch rectangles
  • Place 2 inches apart onto ungreased baking sheets
  • Combine the orange peel and the remaining sugar
  • Sprinkle over the cookies
  • Bake at 350 F for 14-16 minutes or until the edges just begin to brown
  • Remove to wire racks to cool
  • Melt the chocolate chips
  • Decorate the cookies
