Lemon Snowballs

- 1/2 cup butter, softened shopping list
- 2/3 cup sugar shopping list
- 1 egg shopping list
- 1/4 cup lemon juice shopping list
- 1 tbsp grated lemon peel shopping list
- 1 3/4 cup flour shopping list
- 1/4 tsp baking soda shopping list
- 1/4 tsp cream of tartar shopping list
- 1/4 tsp salt shopping list
- 1/2 cup finely chopped almonds shopping list
- confectioners' sugar shopping list
How to make it
- In a mixing bowl, cream the butter and the sugar
- Beat in the egg
- Add the lemon juice and peel
- Combine the flour, baking soda, cream of tartar, and salt
- Stir into the creamed mixture.
- Add the almonds
- Cover and refrigerate the dough for at least 1 hour or overnight.
- Roll into 1-inch balls
- Place on ungreased baking sheets.
- Bake at 350 F for 10-12 minutes or until the bottoms are lightly browned. The Cookies Will Not Brown On The Top.
- Remove immediately to wire racks
- Cool for 5 minutes, then roll in the confectioners' sugar
