How to make it

  • In a mixing bowl, cream the butter and the sugar
  • Beat in the egg
  • Add the lemon juice and peel
  • Combine the flour, baking soda, cream of tartar, and salt
  • Stir into the creamed mixture.
  • Add the almonds
  • Cover and refrigerate the dough for at least 1 hour or overnight.
  • Roll into 1-inch balls
  • Place on ungreased baking sheets.
  • Bake at 350 F for 10-12 minutes or until the bottoms are lightly browned. The Cookies Will Not Brown On The Top.
  • Remove immediately to wire racks
  • Cool for 5 minutes, then roll in the confectioners' sugar
