Foolproof Fig Jam

- 3 cups fresh figs, strawberries, or mixture of both shopping list
- 2 tbls. fresh squeezed lemon juice (seeds removed) shopping list
- 1 cup sugar shopping list
- DO NOT TRY TO DOUBLE THIS RECIPE. YOU NEED THE LARGE SURFACE AREA FOR water EVAPORATION OR IT WON'T JELL. shopping list
How to make it
- Sterilize jelly jar(s) in boiling water bath for 10 minutes.
- Wash and quarter fruit
- Put a bowl in freezer to chill
- Add all ingredients in a large skillet and cook on med. high heat (do NOT use a pot - you need the large surface for proper liquid evaporation)
- Stir constantly and skim off accumulated foam for about 8 to 10 minutes, until mixture begins to thicken
- Jam is done when, after a few seconds, a dollop placed in the chilled bowl SLOWLY runs when bowl is tilted
- Using funnel pour jam into hot, sterilized jelly jar(s), wiping rim before placing seal and ring. Tighten ring and put in boiling water bath, covering jar(s) with 1 inch water, for 15 minutes.
- Remove from water bath and set aside for 24 hours before touching.
- Eat and enjoy!
