Linguine W/shrimp & Scallops & Aglio E Olio

- 6 tbsp olive oil, divided shopping list
- 1/4 cup minced garlic shopping list
- 1 pint clam juice or fish stock shopping list
- 1/4 cup fresh parsley, chopped shopping list
- salt, pepper to taste shopping list
- 8-10 leaves fresh basil, chopped shopping list
- 25-30 medium sized shrimp shopping list
- 60-70 bay scallops shopping list
How to make it
- LINGUINE:
- 1. Cook the linguine al dente & set aside
- FISH STOCK:
- 2. In a saucepan, heat 3 tbsp olive oil over medium heat
- 3. Add garlic & cook until light brown, about 5 minutes
- 4. Add clam juice, cook to a boil then simmer 10 minutes
- 5. Season with salt & pepper
- 6. Place aside on warm
- SEAFOOD:
- 7. In a LARGE saucepan, heat remaining olive oil on medium high heat.
- 8. Add seafood & sautee until done (about 7-8 minutes)
- 9. Add fish stock, linguine, parsley, & basil and bring to a brisk simmer. Stir often, serve immediatley!
