How to make it

  • In a mixing bowl, cream the butter and both of the sugars
  • Add the egg and both of the extracts.
  • Mix well
  • Combine the oats, flour, salt, and baking soda
  • Gradually add to the creamed mixture
  • Stir in the coconut and the chocolate
  • Drop by tablespoonfuls 3 inches apart onto ungreased baking sheets
  • Flatten with a glass dipped in sugar.
  • Bake at 350 F for 8-9 minutes or until golden brown
  • Cool for 1 minute before removing to wire racks
