How to make it

  • ~ For the Blue Jeans ~
  • In bowl mix together the Mascarpone,sugar,cornstarch,tangerine juice and zest until smooth.
  • Stir in the berries,figs,and cherries.
  • ~ For the Chaps ~
  • Now...I know that this is going to seem like a lot of work just to put on protective covering,but when those turn overs hit that hot oil,you are going to want your Blue Jeans good and covered.
  • I like using Grandmother's ole' hand me down rolling pin alot...but I favor my solid marble rolling pin...one that I can place in the cooler and use on the pastry to better satisfaction.
  • Begin...
  • Place flour and salt in bowl,make a well.
  • Put shortening in well.
  • Coat your hands with flour.
  • NOW THIS IS VERY IMPORTANT...DO NOT LET THE HEAT OF THE HAND MELT THE SHORTENING WHILE WORKING IT INTO THE FLOUR.
  • With both hands,work the shortening into the flour using a circular rubbing motion,keeping contact with the flour,not the shortening.
  • Pick up more flour and shortening as you go...always keep the shortening in the middle of the flour.
  • Pour half the water in...gather it into a ball,keep adding the liquid until it comes together,in a soft ball.
  • You will need more or less liquid depending on the humidity in your kitchen.
  • Just remember,your not making bread...your making pastry...So Don't Knead!
  • Work this as little as you have to,just enough to keep it in shape.
  • Cool the pastry off...then throw down some flour on the cool marble counter top.
  • Place ball of pastry in the middle of the flour.
  • Coat rolling pin with flour...start rolling the pastry,turning to get a round shape.
  • This might take a few passes over the pastry...turning it this way and that.
  • Flip over carefully...adding flour to surface as needed.
  • Finish rolling on this side.
  • Cut out pastry with a 3 1/3 inch round cookie cutter.
  • Place the circles on parchment lined sheet.
  • Using a brush...hit the edges of the pastry with beaten egg.
  • Place about 2 teaspoons of your Blue Jean mixture in the center of your Chaps.
  • Fold over to enclose the filling and pinch the edges to seal,using the tines of a fork...gently crimp and seal the edges.
  • Place in refrigerate for about 15 minutes.
  • While your Chap encased Blue Jeans are chillin' out.
  • Pour oil in pan.
  • Heat to fairly hot about 375 degrees.
  • Now ease you little turnover into this hot oil and fry for about two minutes until a very nice color arrives.
  • Drain on paper towels.
  • Sprinkle with sugar...while still hot.
  • Cool for about 10 minutes.
  • Bite and nibble carefully for the filling may be still hot in the center.
  • ~ Now I want to be healthy...and eating the sweet fleshy edible portion of the plant called fruit,at least two different kinds every day will keep me that way... Anyway...that's what the experts say...I try and keep my calorie intake down,cuz' if I don't... my Blue Jeans and Chaps are goin' to be a bit tight.
  • Why figs? Well they are kind of blue...now that people are saying that they are to blame for the fall of man not the apple.
  • GEEZ...Those Frisky Figs...Probably a good thing tho.
