How to make it

  • Put the potatoes in the food processor and chopped roughly.Heat the oil in a soup pan and add the onion for 5min. Add the potatoes and stock, then bring to the boil. Cover and simmer for 7mins until soft add the peas 2mins before the end of cooking. Use a slotted spoon to move half the veg from the pan.Blend the remainig veg and stock in the food processor or with a hand blender until smooth then stir through the other veg add the mint season. Serve
