Mint Pea And Potato Soup

- 800g/1lb potatoes, peeled and cut into chunks shopping list
- 2tsp vegetable oil shopping list
- 1 onion chopped shopping list
- 1litre/13/4pints vegetable stock shopping list
- 350g/12oz frozen garden peas shopping list
- A handful of fresh chopped mint shopping list
How to make it
- Put the potatoes in the food processor and chopped roughly.Heat the oil in a soup pan and add the onion for 5min. Add the potatoes and stock, then bring to the boil. Cover and simmer for 7mins until soft add the peas 2mins before the end of cooking. Use a slotted spoon to move half the veg from the pan.Blend the remainig veg and stock in the food processor or with a hand blender until smooth then stir through the other veg add the mint season. Serve
