How to make it

  • Tip the quark or ricotta mixture into a bowl with the sugar and lemon juice, beat with a wooden spoon until smooth and creamy <you can do this in advance> Gently stir in the berries until they begin to break up and the cheese is streaked pink. Taste and add more lemon juice if liked.
  • Note: I have never used the ricotta +sour cream before but have been told by friends it works just as well.
