How to make it

  • Preheat the oven to 375 F
  • Lightly grease 2 baking sheets or cover with parchment paper
  • In a large bowl using an electric mixer, cream the butter with the brown sugar
  • Add the egg and molasses
  • Beat until light and fluffy
  • Beat in the baking soda, cinnamon,ginger, and salt
  • Add the flour
  • Mix until the dough is stiff
  • Using a #12 ice cream scoop or a 1/3 cup measure, scoop the dough from the bowl.
  • Dip the tops of the balls of dough into sugar
  • Place them 3 inches apart, sugar side up, in the prepared pan
  • Sprinkle each cookie with 5 or 6 drops of water
  • Bake for 12 minutes, or until just set
