Carrot Marmalade Done Right

- 12 large carrots shopping list
- 2 lemons shopping list
- 2 oranges shopping list
- 6 cups sugar shopping list
- 1/2 -1 cup water shopping list
How to make it
- clean carrots, chop and cook until tender in as little water as possible. (1/2-1 cup) I did this part in slow cooker, but can be done on stovetop.
- When cooked, Mash or run through food processor till small dice or smooth depending on what texture you like. Put into or back into pot.
- Put seeded lemons and oranges in food processor. Process till small dice. Add to pot .
- Add sugar.
- Bring to boil. Reduce heat and gently boil till thick. Pour into sterilized jars. Place lids and rings on, finger tighten.
