Chicken W/ Mandarin Salsa-sauce

- boneless, skinless chicken breasts (i usually use 2pcs per serving) shopping list
- 2 mandarin orange fruit cups (such as del monte) shopping list
- 2 tbsp brown sugar shopping list
- 2 tbps spicy mustard shopping list
- 1.5 tbsp cornstarch shopping list
- 1/4 c water shopping list
- 2 tbsp worcestershire sauce shopping list
- 1 tbps lemon juice shopping list
- 1/4 diced green pepper shopping list
- 3 slices of onion, diced (i used white, but i would have preferred red) shopping list
- salt and pepper to taste shopping list
How to make it
- drain oranges, set juice aside
- dice green pepper and onion
- add cornstarch to water, mix till dissolved
- add juice, brown sugar, and mustard in small sauce pan. heat to boiling. reduce heat to a low simmer; slowly add water/cornstarch mixture
- stir until desired thickness; add cornstarch by the teaspoon if it doesn't thicken enough
- cover and let sit
- prepare and cook chicken ( i just add olive oil to a pan and cook it for about 15 minutes, flipping sides halfway through until it's done.)
- add diced green pepper and onion to sauce, stir
- while the chicken is cooking, i like to make boil in bag brown rice in the microwave, but you can substitute pretty much any grain or potato if you want. i like the flavor and texture of the brown rice more for saucy things.
- dish out chicken, top with spoonfuls of sauce
- enjoy!
