Spinach, White Bean And Turkey Soup

- 1 tablespoon olive oil shopping list
- 1 pound Italian turkey sausage (casing removed and crumbled) shopping list
- 1 tablespoon olive oil shopping list
- 1 onion (chopped) shopping list
- 2 cloves garlic (chopped) shopping list
- 4 cups chicken stock shopping list
- 1 (19 ounces) can cannellini beans (drained and rinsed) shopping list
- 1 teaspoon oregano shopping list
- 1 bay leaf shopping list
- 1 bunch spinach (chopped) shopping list
- salt and pepper to taste shopping list
- 1 tablespoon lemon juice shopping list
How to make it
- Heat oil in a pan.
- Add the sausage and cook until no longer pink and set aside.
- Heat more oil in the same pan.
- Add the onion and saute until tender, about 5-7 minutes.
- Add the garlic and saute for another minute.
- Add the sausage, stock, beans, oregano, and bay leaf and simmer for 20 minutes.
- Add the spinach and simmer until it wilts.
- Add the lemon juice and remove from heat.
