2nd Time Around Mushroom Soup

- Oven roasted mushrooms: shopping list
- oil shopping list
- 1 lb mushrooms, trimmed, halved shopping list
- 3 cloves garlic, peeled, crushed shopping list
- salt and pepper shopping list
- For soup: shopping list
- 1 cup oven roasted mushrooms (or more) shopping list
- 3 cups chicken broth shopping list
- 8 oz totellini shopping list
- 4 oz spinach, fresh shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven 450.
- Lightly oil shallow baking dish, large enough to hold mushrooms in a single layer. Add mushrooms, and toss with 2-3 TBS oil. Add garlic, season with salt. Roast 20 minutes, stirring occasionally. Mushrooms should be browned, season with pepper.
- To make soup:
- Bring mushrooms to a boil in broth. Add pasta and cook. Add spinach and cook until wilted. Season with salt and pepper. Crushed red pepper, optional.
