How to make it

  • Preheat oven 450.
  • Lightly oil shallow baking dish, large enough to hold mushrooms in a single layer. Add mushrooms, and toss with 2-3 TBS oil. Add garlic, season with salt. Roast 20 minutes, stirring occasionally. Mushrooms should be browned, season with pepper.
  • To make soup:
  • Bring mushrooms to a boil in broth. Add pasta and cook. Add spinach and cook until wilted. Season with salt and pepper. Crushed red pepper, optional.
