How to make it

  • Preparation:
  • Roll the shanks in the flour seasoned with salt and pepper.
  • Melt the butter in a large saucepan, and brown the shanks on all sides. Add the wine and cook over a low heat for ten minutes. Add the tomatoes and the garlic, cover and simmer for about 1/2 hour. Before serving sprinkle with grated rind and chopped parsley.
  • Note: Serve with Risotto or Polenta
