How to make it

  • Roll out a 2 ft piece of waxed paper or foil near the stove top. Heat a large nonstick skille over medium high heat -- pan needs to be hot when the chicken is added. Plie the shredded cheese on the work surface created with the wax paper. Season your chicken on both sides with pepper. Then press the chicken firmly into the cheese coating both sides with as much of the cheese as possible. Add 1 TBS olive oil to the skillet. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even golden casing on the chicken breasts.
  • Drain off any excess oil from the chicken before serving.
