Marlboro Cyclone Chili

- 2 lbs beef chuck, cut into 1/2" cubes shopping list
- 2-4 TBS olive oil shopping list
- 4-6 fresh jalapeno peppers shopping list
- 1 med onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1/2 sweet green pepper, chopped shopping list
- 8-10 tomatillos shopping list
- 1 - 8 oz can tomato sauce shopping list
- 1 1/2 cups beef broth shopping list
- 3 TBS chopped fresh cilantro shopping list
- 1 TBS paprika shopping list
- 2 tsp crushed cumin seeds shopping list
- 1/2-1 tsp salt shopping list
- 1/4 tsp cracked black pepper shopping list
How to make it
- Brown beef in hot oil in a large heavy kettle.
- Dice jalapeno peppers, discarding seeds and membrane. Add to beef with onion, garlic and green pepper.
- Husk tomatillos, wash and chop. There should be about 1 1/2 cups; add to beef mixture. Add tomato sauce, beef broth, cilantro, paprika, cumin seeds and seasonings; bring to a boil.
- Reduce heat and simmer for about 2 hours, or until beef is tender.
- Tornado Chili: Use habanero peppers instead of jalapenos.
