How to make it

  • In a heavy pan, brown meat; remove meat from pan. Cook onion in hot oil.
  • Combine flour, salt and pepper; toss with browned meat. Return to pan; cook and stir to brown flour.
  • Add wine, coffee, garlic and thyme. Cover and simmer for 2 hours. Lift out cooked meat and onions with a slotted spoon.
  • Boil sauce to thicken. Adjust seasonings. Return meat and onion to pan; heat.
  • Serve with sauteed sliced mushrooms, if desired.
