Bruschetta

- 1 Loaf of ciabatta or sourdough bread shopping list
- 2 garlic cloves shopping list
- 85ml of olive oil shopping list
- 1 Small red onion, finely chopped shopping list
- 6 roma tomatoes, finely chopped shopping list
- 3 tbs basil, torn shopping list
How to make it
- Preheat grill to high. Slice the ciabatta into 1cm slices and toast for about 2 minutes, until lightly golden. Rub with one of the peeled cloves of garlic. Finely chop the remaining garlic. Gently mix with the red onion, tomatoes, basil and remaining oil. Season to taste with freshly cracked black pepper. Spoon the mixture onto each piece of bread garnish with extra pepper and a whip of olive oil. Serve straight away before the bread becomes soft again.
