How to make it

  • Steam or boil your rice ( I use Jasmine rice which I am addicted to)
  • Bring 3 cans of coconut milk to a gentle boil (to high will make it splash)
  • add 1 cup of rice milk (or oat/almond/soy milk)
  • Add 1 cup of coconut shreds
  • Add between 2-6 tablespoons of Yellow curry powder (depends how strong you like it.)
  • Add a bit of sea salt for taste
  • Add 8 frozen rice balls
  • Put 1 and half blocks of tofu on a clean towel and wrap and squeeze a bit to extract the water (it will allow the curry flavor to penetrate the tofu better)
  • Cube the tofu and add it to the simmering curry
  • Add 2 cups of peas and carrots
  • Boil for 3 minutes
  • Add chopped up Cilantro and basil leaves and mix gently
  • cook for maximum 2 minutes more
  • Serve hot with steaming rice and cilantro garnish on top
  • I think I am tempted to add Almond Slivers next time :)
