How to make it

  • Melt butter in a skillet and add onion; sautee until limp.
  • Sprinkle with curry and sautee another minute or two.
  • Add curried onions, pumpkin, and salt to blender and process until well mixed (you may want to do it in batches).
  • Add cream while blending.
  • Transfer to a large saucepan and heat slowly with chicken stock.
  • Serve very hot, garnish with sour cream if desired.
