Nancy's Pumpkin Soup

- 2 large onions, halved shopping list
- 3/8 cup butter shopping list
- 3/4 teaspoon curry powder shopping list
- 3 cups canned pumpkin shopping list
- 2 1/4 teaspoons salt shopping list
- 3 cups heavy cream shopping list
- 3 3/4 cups chicken stock shopping list
How to make it
- Melt butter in a skillet and add onion; sautee until limp.
- Sprinkle with curry and sautee another minute or two.
- Add curried onions, pumpkin, and salt to blender and process until well mixed (you may want to do it in batches).
- Add cream while blending.
- Transfer to a large saucepan and heat slowly with chicken stock.
- Serve very hot, garnish with sour cream if desired.
