Loaded Baked Potato Soup

- 2 quarts whole milk shopping list
- 1/2 cup butter shopping list
- 1/2 onion, diced shopping list
- 5 baked potatoes (left over works great) shopping list
- 2/3 cup flour shopping list
- 1/2 cup cooked bacon, crumbled shopping list
- 1 1/2 cups sour cream shopping list
- 2 garlic cloves, minced shopping list
- salt and pepper to taste shopping list
How to make it
- Peel and cut the baked potatoes into medium sized chunks.
- Place butter and onions in large pot, cook until onions start to sweat.
- Reserve 2 cups of milk and pour the rest in the pot with the onions.
- Warm milk and while it is heating mix the remaining milk with the flour, whisking until smooth.
- Whisk the milk/flour mixture into the heated milk, continuing to whisk until well blended and smooth.
- When the milk has thickened add the potatoes, bacon,salt,pepper and garlic.
- Finally mix in the sour cream just until melted.
- Garnish with green onions, bacon and cheddar cheese.
