Carrot And Cheese Muffins

- 300g self raising flour shopping list
- 140g carrots - grated shopping list
- 140g cheddar cheese - grated shopping list
- 235ml whole milk shopping list
- 50ml rape seed oil shopping list
- 2 eggs shopping list
- 20g pesto shopping list
- 1/2 tsp salt shopping list
How to make it
- 1.Pre-heat the oven to gas mark 6.
- 2. Mix together flour flour salt carrots and cheese.
- 3. In a seperate bowl, whisk together the milk pesto eggs and oil.
- 4.Pour the wet mixture into the dry and stir a few times until just combined(The mixture will be runny and lumpy but do not stir to make smooth.
- 5. Spoon the mixture into the muffin cases.
- 6. Bake for 20-30min until risen golden and firm.
- 7.Tada!
