How to make it

  • 1.Pre-heat the oven to gas mark 6.
  • 2. Mix together flour flour salt carrots and cheese.
  • 3. In a seperate bowl, whisk together the milk pesto eggs and oil.
  • 4.Pour the wet mixture into the dry and stir a few times until just combined(The mixture will be runny and lumpy but do not stir to make smooth.
  • 5. Spoon the mixture into the muffin cases.
  • 6. Bake for 20-30min until risen golden and firm.
  • 7.Tada!
