Green Chile Cheese Grits

- 11/2-2 Cups Quick Grits shopping list
- 1/2 cup butter shopping list
- 2 cups shredded sharp cheddar cheese shopping list
- 2 eggs beaten shopping list
- 1-2TBS Sirracha or other hot sauce shopping list
- 1 can corn shopping list
- 1 or 2 small cans of HOT chopped green chile shopping list
- 2 large tomatoes shopping list
- 2TBL Garlic Salt shopping list
- Salt to taste shopping list
How to make it
- Cook grits as directed on box. You may need to add an additional 1/4 cup water because you want them to e a little soupier than usual. When grits are close being ready add cheese, green chile, corn, sirracha, garlic salt, and butter. Stir and taste to see if more salt or other seasoning is necessary. I always end up making adjustments at this time. Take off heat. Add beaten eggs and stir vigorously. Pour into a shallow casserole dish. Top with more shredded cheese and thick slices of tomato. Cook at 350 for 30minutes.
