Vegan Chili

- *15 oz chopped tomatoes (about 5 plum tomatoes) shopping list
- * 2- 3 (15.25 ounce) cans kidney, black, or garbanzo beans, drained shopping list
- * 1 medium onion, chopped shopping list
- *2- 3 cloves garlic, minced shopping list
- * 4 stalks celery, diced shopping list
- * 2 bell peppers, chopped shopping list
- * 2 bay leaves shopping list
- * 1- 2 tablespoons chili powder shopping list
- *1 tsp cumin shopping list
- * 3 tablespoons molasses shopping list
- * 1 cube vegetable bouillon shopping list
- * 1 tablespoon chopped fresh cilantro, or 1 tsp dried shopping list
- * salt and pepper to taste shopping list
- * 3 tablespoons all-purpose flour shopping list
- * hot water shopping list
How to make it
- 1. In a slow cooker combine tomatoes, beans, onion, garlic, celery, bell pepper, bay leaves, chili powder, molasses, bouillon, cilantro, salt and pepper . Cook on high for 3 hours. (I used a pressure cooker for mine-- cooks a lot faster that way!)
- 2. Dissolve flour in about 1/2 cup hot water. Pour into chili and cook 1 more hour. (or less with a pressure cooker.)
