Pumpkin Pudding Whip

Easy, yummy and quick. One day I needed a dessert that was diabetic friendly in a hurry and this was what I had on hand. I was surprised at how well it turned out. I want to try this again and possibly add some softened cream cheese.
Ingredients
- 2 c. canned pumpkin shopping list
- 1 pkg. sugar-free instant butterscotch pudding shopping list
- 1 pkg. sugar-free instant vanilla pudding shopping list
- 1 12-oz can evaporated milk shopping list
- 1 cup coconut and/or 1/2 pkg mini chocolate chips or sugar free chocolate chips (optional) shopping list
- cinnamon shopping list
How to make it
- Combine pumpkin, puddings and milks in a bowl and beat until smooth and thick. Fold in coconut and/or chocolate chips, if desired. Spoon into individual dishes and top with a sprinkling of cinnamon.
