How to make it

  • 1. Preheat the oven to 170C. Grease a 25x20cm tin.
  • 2. Cream the butter and sugar together, then beat in the coconut milk and eggs.
  • 3. Peel and grate the mango, leaving some bigger pieces to create little juicy pockets in the cake!
  • 4. Combine all the ingredients well, but avoid over working the batter.
  • 5. Pour into the tin and bake for around 30 minutes, or until golden brown.
