How to make it

  • Heat oil in a flat pan and add cardamon,cinnamon,clove&cumin seeds,then add the sliced onions and fry them really well .all the raw smell & taste should be gone,they should turn a nice golden and give off a lovely aroma,but take care not to overdo it or else they'll taste bitter.
  • Turn the flame to low & add the turmeric and gingergarlic paste ,slit green chilli & saute well,now addthe coriander powder,red chilli powder and dry coconut powder,salt and mix really well,and spread the onions evenly on the pan
  • now break in the eggs directly over the pan just spread the yolks lightly with a fork,spread the eggs evenly over the onions,sprinkle some salt over the eggs and cover & cook over a low flame for about 8-10 mins till the eggs are cooked,keep a watch so that they dont burn @ the bottom.   • once the top of the eggs is cooked turn the top side down so that it gets evenly browned.after 2 mins take it off the flame &sprinkle some garam masala & garnish with coriander leaves and serve with bread,rotis,phulkas,or steamed rice.Check pictures for guidance .

gently spread the yolks all over the onion base   Close
the top of the eggs is cooked   Close
randomly cut thru the eggs and turn it over to brown the top. i have cut it into squares,but u can even break it into smaller uneven pieces.   Close
