Tabbouleh (makes You Want To Shake Your Booty!)

- 2 bunches fresh parsley (or 1 huge bunch), about 1 1/2 cup chopped, minus the stems shopping list
- 2 tablespoons fresh chopped mint (or more!) shopping list
- (1 small onion, minced- optional but my guys don't like it in) shopping list
- 3 to 6 medium diced fresh tomatoes shopping list
- 1/2 to 1 tsp salt (to taste- add more at end if needed) shopping list
- 1/2 tsp black pepper shopping list
- 1/2 cup cooked bulgur wheat, cooled OR cooked couscous, cooled shopping list
- 6 tablespoons lemon juice- you might want to try less but we really like it lemony shopping list
- 3 tablespoons olive oil shopping list
How to make it
- Cut stems off parsley and coarsely chop, throw into big bowl with rest of ingredients and let rest an hour, if you can wait. Taste and adjust if needed. Nice appetizer for Kefta and Tzatziki sauce
