How to make it

  • Heat the milk, bread crumbs and butter in a double boiler. Flake the salmon and seaon with lemon juice. Put into the hot mixture, add egg yolks and cook thick. Season to taste. Beat egg whites stiff, fold in the hot (or cool) mixture, pour into a greased baking dish and bake in a moderate oven 350 for 45 minutes, or in a very moderate oven 300 for 1 hour. Serve immediately in the dish in which baked.
  • You may exchange the salom with the cheese from the other recipe and visa versa. One souffle is with a white sauce and the other with bread crumbs.
