Fall Vegetable Slaw

- 4 Medium beets, trimmed and well scrubbed shopping list
- 4 Medium carrots, grated shopping list
- ¾ Cup Bottled red wine vinegar and oil salad dressing shopping list
- 1/3 Cup Prepared horseradish shopping list
- 1 tsp. Granulated sugar, optional shopping list
- Freshly ground pepper and salt to taste (salt is optional) shopping list
- ½ Tsp. caraway seeds, optional shopping list
- 1 Tsp. ground cumin, optional shopping list
- 1 Tsp. onion powder shopping list
- 1/3 Cup golden raisins shopping list
How to make it
- Peel beets only if the skin is very thick; young beets need no peeling. Grate FINELY in food processor or on a box grater. Remove to a large bowl. Grate carrots. Add to beets. Mix in raisins. Combine red wine vinegar dressing, horseradish, optional sugar and spices. Fold into salad. Let stand 30 minutes if time allows. Serve at room temperature or slightly chilled.
