Simple Baked Eggplant

- 1/4 c no-salt-added broth (beef, vegetable or chicken) shopping list
- 1 medium eggplant, cut into 1/2 inch slices shopping list
- juice of 1 lemon shopping list
How to make it
- Preheat oven to 425 degrees F.
- Pour the broth into a roasting pan.
- Place the eggplant slices into the pan, lightly coating them on both sides with the broth.
- Bake for 10 minutes.
- Turn eggplant slices over, and bake for another 10 minutes.
- Add lemon juice and let set for a few minutes.
