How to make it

  • Preheat oven to 425 degrees F.
  • Pour the broth into a roasting pan.
  • Place the eggplant slices into the pan, lightly coating them on both sides with the broth.
  • Bake for 10 minutes.
  • Turn eggplant slices over, and bake for another 10 minutes.
  • Add lemon juice and let set for a few minutes.
