Low Fat Chicken Chili

- 1 lb chicken shopping list
- 2T olive oil shopping list
- 1 lg white onion, finely chopped shopping list
- 2 celery stalks, finely chopped shopping list
- 1 box chicken broth shopping list
- 1 can green chilis shopping list
- 1 can northern beans shopping list
- 1 can black beans shopping list
- 1 can chick peas, pureed shopping list
- 2 cans fire roasted diced tomatoes(muir glenn brand) shopping list
- salt shopping list
- cumin shopping list
- chili powder shopping list
- onion powder shopping list
- garlic powder shopping list
- NOTE: I add spices according to taste, so I don't put amounts shopping list
How to make it
- Sautee seasoned chicken til done. Finely chop, or shred.
- Add olive oil, onion and celery to large pot. Cook til clear.
- Add broth, chicken, all of canned ingredients, except chick peas, and all of spices, cook til boiling. Turn down heat.
- Add pureed chick peas.
- Cook on low, med stirring every couple of minutes, til done.
- Garnish to your liking.
- Great Leftovers!
