The Best Huevos Rancheros

- 10 corn tortillas shopping list
- 10 Large huevos ;] (eggs) shopping list
- olive oil shopping list
- ~~~Salsa~~~ shopping list
- 2 Large ripened tomatoes finely chopped, OR 15 ounce can of fire roasted tomatoes shopping list
- 1/2 cup chopped onion shopping list
- 1 diced Anaheim pepper shopping list
- 2 tablespoons of chopped cilantro shopping list
- chili powder and ground cumin to taste, (a dash or two) shopping list
- ~~~Optional~~~ shopping list
- avocado Slices shopping list
- refried beans shopping list
How to make it
- ~~~Salsa~~~
- 1) Sauté onions in olive oil until translucent
- 2) Add in tomatoes, if using canned tomatoes shred with fingers as you add them
- 3) Add in Anaheim pepper, cilantro, chili powder and cumin
- 4) Heat until you see bubbles forming then reduce heat to low and stir occasionally while you prepare other ingredients
- 6) Heat oven to lowest setting
- 7) Layer the bottom of a pan in olive oil and fry the tortillas until crisp but still malleable place on hot plate in oven and continue
- 8) Fry eggs in olive oil (I suggest leaving the yolk runny it makes it 10 times better, but if you choose flip the eggs and fry until yolks are firm)
- 9) Take a plate put a small amount of salsa on bottom, place tortilla and then fried egg of that and top with more salsa and cilantro if desired
- If you have them, spread refried beans on to the tortillas before placing the egg on top, then place the avocado on top of that.
- Personally I'm a two egg two tortilla smothered in salsa person, but these are so good you will most likely want more. Enjoy!
