Asian Mushroom Soup

- 2 TB vegetable oil shopping list
- 4 garlic cloves,thinly sliced shopping list
- 1(2")fresh ginger,peeled and thinly sliced shopping list
- 2 qts. reduced-sodium chicken broth shopping list
- 3 TB soy sauce shopping list
- 2 TB fish sauce (optional) shopping list
- 2 portobello mushrooms,caps peeled,cleaned and thinly sliced shopping list
- 10 small shitake mushrooms,cleaned,left whole shopping list
- 5 oz crimini mushrooms,thinly sliced shopping list
- outer leaves of 1 small napa cabbage or 1/2 lg. cabbage,leaves roughly torn shopping list
- 2 carrots,peeled,cut in 1/2 lengthwise then in half crosswise,and very thinly sliced. shopping list
- 2 good handfuls snow peas shopping list
- 1 small bunch scallions,thinly sliced shopping list
- dark sesame oil shopping list
How to make it
- Heat oil in large saucepan over med. heat and cook the garlic and ginger till browned. Combine brotj,soy sauce and fish sauce,if usuing,to the saucepan and bring to simmer.
- Add remaining ingredients except snow peas,scallions and sesame oil. simmer 20 mins,and then add snow peas.
- Cook for just a few minutes longer,until thwe snow peas have softened but are still bright green.
- Add the scallions to the saucepan,remove from heat,and ladele into serving bowls. Drizzle a little sesame oil over the top of each serving.
