Chickpea And Bacon Soup

- 1 chopped onion shopping list
- 4 rashers streaky bacon shopping list
- 400 ml beef stock shopping list
- 300 ml passata with herbs shopping list
- 400 g can chickpeas shopping list
- 1 tsp crushed chilli flakes shopping list
- 1 tsp crushed garlic shopping list
How to make it
- In a large pan, fry 1 chopped onion with 4 rashers streaky bacon, rinded and diced, stirring, for 7-8 minutes or until the onions are golden and the bacon is cooked. Add beef stock, made with stock cubes, passata with herbs, and a can chickpeas, drained and rinsed.
- Season lightly. For a spicy flavour, add 1 tsp crushed chilli flakes and crushed garlic. Let it simmer for 10 minutes, and serve with crusty bread. Comforting and yummi!
