How to make it

  • Pre-heat the oven to 375 degrees. Grease a 9x13 inch baking pan.
  • For the topping of the coffee cake, mix together the 1/2 cup brown sugar and 1/2 cup flour. Add the peanut butter and vegan margarine until the mixture is crumbly.
  • In a large bowl, mix together the 2 1/4 cups flour, 1 cup brown sugar, baking powder, baking soda and salt. Add the soy milk, 1/2 cup peanut butter, egg replacer and 1/4 cup margarine, and beat until smooth.
  • Pour the batter into the baking powder, and sprinkle the topping mix on top.
  • Bake for 30 minutes, or until toothpick inserted in center comes out clean.
