Cocoa-peppermint Creme Cookies

- COOKIES: shopping list
- 3 T. butter, melted shopping list
- 1 egg white shopping list
- 1/4 C brown sugar shopping list
- Pinch of baking soda shopping list
- 1/2 tsp. salt shopping list
- 1/4 C cocoa powder shopping list
- 1/2 C flour shopping list
- ¼ tsp. peppermint extract shopping list
- PEPPERMINT butterCREAM FILLING: shopping list
- 2 c. powdered sugar shopping list
- 4 T. melted butter shopping list
- 1/4 tsp. peppermint extract shopping list
- 1/2 tsp. heavy whipping cream shopping list
How to make it
- COOKIES:
- Combine all ingredients together. Add flour slowly and mix, until dough is roll-able and not sticky. Once well mixed, roll thin, very thin.
- Cut out your shapes (I did hearts for V-day!)
- Bake at 325 degrees for 4-7 minutes, or until cookies have firmed and browned slightly around edges. Remove from oven and cool.
- BUTTERCREAM FILLING:
- Mix together all ingredients until it becomes thick and easy to roll with a rolling pin. Roll until about 1/4″ thick. Cut into desired shape. Place atop cooled cookies. Melt Chocolate CANDIQUIK according to the package directions. Dip cookies into melted CANDIQUIK with a fork, spoon chocolate over the cookie until fully covered. Set to dry on a piece of wax or parchment paper. Makes about 10 (large) cookies.
